What is EVOO?

You may have come across the acronym “EVOO” in a recipe that has made you wonder, “What is this oil and where can I buy it?” It is, in fact, the oldest ingredient in the world and we use it daily in the kitchen: Extra Virgin Olive Oil. The acronym EVOO (EXTRA VIRGIN OLIVE OIL) was first coined by the Agronomist Massimo Epifani, a Professor and Consultant to universities, organisations and associations connected to the world of oil and food, to differentiate it from the simple Olive Oil.
What is the difference between these two oils?
Extra Virgin Olive Oil (EVOO) is made purely by squeezing healthy olives which have not yet fallen to the ground. It does not include additives, chemical solvents or other industrial interventions. Alternatively, Olive oil is made by blending refined oils (treated with chemicals) with Extra Virgin Olive Oil. Extra Virgin Olive Oil is the cornerstone for the mediterranean diet, which is responsible for a lower frequency of chronic diseases and longer and healthier lives.
